Research on Coconut Oil

There is a significant body of information available on the internet that pertains to research regarding coconut oil... research confirming that one of the best oils you can use is coconut oil!  As a cooking oil, its chemical structure is kept intact and therefore is resistant to mutations of fatty acid chains - even when used at higher cooking temperatures: It is the safest oil to use at high temperatures. On the other hand, seed oils - when used for cooking - produce trans fatty acids which have been indicated in cancer,  and fatty build-up in the arteries and liver.

The coconuts used for these oils are grown and processed organically, without the use of fertilizers or chemical inputs.  Each batch of oil is tested and goes through quality control procedures.  Both of these oils taste lightly of sweet coconuts,  have low moisture content and a long shelf life. 

David Wolfe, a leading raw foods advocate has tested the enzymes that naturally occur in fresh coconut meat.  He says these enzymes are heat liable at 170° F.  Therefore all three of these oils contain the live enzymes and can be considered live foods making them easier to digest and healthier for the body.  To the best of our knowledge these are the only three coconut oils available in the world that do not see temperatures above 170° F.

Here is a summary for you to help you in choosing which oil to purchase:

  • If heat is important to you the India oil sees the least amount of heat, but both oils see less than 117°, so they should all have live enzymes.  Neither the Centrifuged nor the Philippine oil see any heat while they are processed.

  • If trace minerals are important to you the Philippine oil probably has the highest amount of trace minerals.  People who use it tell me there is more "life energy" in the Philippine oil than any other oil they have tested.

  • If taste is the most important to you, and especially if you use the coconut oil raw a lot, you would most likely choose the Centrifuged oil.  The Philippine oil is a little creamier and possibly a little sweeter, and they are very similar, but our choosiest customers usually select the Centrifuged oil.
